Soul Caliber II

I recently rented the game, and have blasted through most of it. But a few things have remained a mystery, as there was no booklet with the game. Some missions mention things such as guard this, guard that... I am stuck on one, which says defeat your enemy using guard break. What are these and how do you execute them?
